Fresh Raspberry recipes

Raspberries,

Everybody loves them, the best thing about cooking with these wonderful fruits is it`s going to taste good.
From cakes, to pies, crisps or even ice cream it`s going to be good.

We will start out with my favorite way to make a delicious raspberry pie.
This is a wonderful double-crust pie piled high with fresh raspberries. Chunks of butter go on just before the top crust is added, and then the pie is baked until the juices bubble up and the crust is golden brown.

Here are the things you will need.     


Things you will need
1 quart of fresh raspberries
1&1/4 cups of white sugar
8 teaspoons of cornstarch
2 tablespoons of quick-cooking tapioca
6 tablespoons of water
4 tablespoons of butter
1 pastry for a 9 inch double crust pie

Ok now remember the most important thing is that the raspberries are fresh from the market or you very own back yard. So check your fridge, go shopping and let`s make some pie.

Sweet now we are ready to get baking our pie.

First pre-heat your oven to 425 degrees F (220 degrees C)

1. Mix together raspberries, sugar, cornstarch, minute tapioca and water. Mix and let sit while you make your pie crust.

If you don`t have a recipe for crust or have never made one yourself you can go buy one or follow my recipe.

Making a Pastry for a Double-Crust Pie
It`s super easy and here is all you will need.
2 cups of all- purpose flour
3/4 teaspoon of salt
2/3 cup of shortening
6 tablespoons of cold water

Now let`s make that crust, in a bowl, combine flour and salt; cut in the shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide dough in half so that one ball is slightly larger than the other. Roll out larger ball to fit a 9-in. or 10-in. pie plate. Transfer pastry to pie plate. Trim pastry even with edge.

Pour desired filling into crust. Roll out second ball. Position over filling; cut slits in pastry. Trim pastry to 1 in. beyond edge of pie plate. Trim pastry to 1 in. beyond edge of pie plate. Fold top crust over bottom crust. Flute edges. Bake according to recipe directions.

Now we`ve got crust and something to fill it with. Put berries in bottom crust, and put 4 - 1 tablespoon pats of butter on top. Put on top crust and crimp edges. Make slits in the crust to allow the steam to escape.



Directions
We had already set the oven to 425 F (220 C) now let`s bake that pie.
Set the pie in the oven and bake at your set temp 425 F for 15 minutes, then reduce heat to 350 F (175 C) and bake for 45 minutes. Take out the pie and let it cool, there it is a great recipe for fresh raspberries.
Now remember this is just a basic recipe and there are many ways you can spice it up.
Try it a few times and see what you and your family like`s the best.

One of my favorite thing to cook with raspberries is Chocolate Raspberry Cheesecake.
Nothing makes cheesecake better than raspberries.

Things you will need

2 (3 ounce) packages cream cheese, softened
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
1 egg
3 tablespoons lemon juice from concentrate
1 teaspoon vanilla extract
1 cup fresh or frozen raspberries
1 (6 ounce) packaged graham cracker pie crust Chocolate Glaze: 2 (1 ounce) squares semisweet chocolate 1/4 cup whipping cream

DIRECTIONS
Heat oven to 350 degrees F. With mixer, beat cream cheese until fluffy. Gradually beat in Eagle Brand® until smooth. Add egg, lemon juice, and vanilla; mix well.Arrange raspberries on bottom of crust. Slowly pour cheese mixture over fruit.Bake 30 to 35 minutes or until center is almost set. CoolChocolate Glaze: In small saucepan, over low heat, melt semi-sweet chocolate with whipping cream. Cook and stir until thickened and smooth. Remove from heat. Top the cheesecake with chocolate glaze and chill. Garnish as desired. One thing I always do is Soften the cream cheese in microwave on high 15 to 20 seconds.

When growing your own raspberries sometimes people like me just have too many. The best thing to do if you have too many raspberries is make jam.



Raspberry Jam
Things you will need
4 cups (1 liter) granulated sugar
4 cups (1 liter) raspberries

DIRECTIONS

1. Place sugar in an ovenproof shallow pan and warm in a 250°F (120°C) oven for 15 minutes. (Warm sugar dissolves better.)2. Place berries in a large stainless steel or enamel saucepan. Bring to a full boil over high heat, mashing berries with a potato masher as they heat. Boil hard for 1 minute, stirring constantly.3. Add warm sugar, return to a boil, and boil until mixture will form a gel (see tips, below), about 5 minutes.4. Ladle into sterilized jars and write the date Tip: To make a small boiling-water canner, tie several screw bands together with string or use a small round cake rack in the bottom of a large covered Dutch oven. Be sure the pan is high enough for 2 inches (5 cm) of water to cover the jars when they are sitting on the rack. There you have it, raspberry jam for the whole year.

Now don`t think you can only make sweets with raspberries here is a salad dressing recipe your whole family will love.

Raspberry Vinaigrette

Things you will need
1 1/3 cups fresh raspberries or thawed frozen unsweetened raspberries
1/3 cup reduced sodium chicken broth
2 tablespoons sugar
1 tablespoon cider vinegar
2 1/2 teaspoons olive or canola oil
2 teaspoons Dijon mustard
mixed salad greens

DIRECTIONS

Press raspberries through a sieve, reserving juice; discard seeds. In a jar with a tight-fitting lid, combine the broth, sugar, vinegar, oil, mustard and reserved juice. Refrigerate. Shake before serving over salad greens.
Super easy and super good enjoy this recipe with your favorite salad.

The last two recipes I will add are for shakes and smoothies
Raspberry milk shake
Great for kids and adults alike, it` a hot summer day well why not make a raspberry shake here is how.

Things you will need
1 1/4 cup (1/2 pint) 300 ml milk
2/3 cup (150 ml) 1/4 pint raspberry-flavoured yoghurt
4 oz (110 g) fresh raspberries
your favorite kind of ice cream

1. Liquidise the milk, ice cream, yoghurt and most of the raspberries, blending until frothy.

2. Pour into glasses and place the remaining fruit on top to serve.

Raspberry smoothies
Health and great for a hot summer day

Things you will need
1 medium banana
1/2 cup of red raspberries
1/2 cup of black raspberries
1/2 cup of yoghurt
1/2 cup of ice

Directions
Cut the raspberries into small pieces that will fit through a straw. Blend the banana, ice, and yogurt with the black raspberries. The strong dye of the raspberry will create a dark coloring. Add a few pieces of the red raspberry at the bottom of the cup, pour the smoothie 1/4 then add more pieces of the red raspberry. Finish at the top with more pieces and enjoy.
